Rousselot presents solutions for protein enrichment at IFT 2015

Manufacturers looking to give foods and beverages an added protein boost should stop by the Rousselot booth at this year’s IFT.

Here, they will have the opportunity to see how gelatin and collagen peptides can be used in a variety of formulations to elevate protein levels, deliver health benefits and preserve organic labelling. Visitors to the booth can also learn about a revolutionary ready meal nutrient delivery concept helping to fortify meals and prevent micronutrient deficiencies.

Enhance protein content

Described as 'the hottest functional food ingredient trend' in the United States, protein is being added to a range of applications to deliver many nutritional benefits. As pure and natural proteins, Rousselot’s gelatins and Peptan collagen peptides provide manufacturers with effective solutions that can boost protein levels and provide antiageing benefits in end-products such as protein bars and drinks, while at the same time delivering a better mouthfeel and maintaining the product’s taste.

Rousselot will be demonstrating the functionality and efficacy of its ingredients via on booth samples: shelf-stable blueberry yoghurt flavoured snack bars will showcase use of its gelatin solutions and a sweet, green tea flavoured drink will highlight the versatility of Peptan collagen peptides.

Preserve organic labelling

The US organic food market looks set to experience solid growth until 2018 and an increasing number of manufacturers are keen to carve their share in this dynamic sector. Gelatin is an effective solution to help formulate organic options but is often overlooked by food developers. Regulations state that even non-organic gelatin can be used in organic applications.

Innovative nutrient delivery system for catering services

Rousselot will also present a new nutrient delivery concept at IFT. The system, called Food Fortified Coating (FFC), provides nutrients (such as a blend of collagen peptides, vitamin D3 and calcium) within a thin layer of gelatin that is sprayed over the meal.

It has already been successfully launched in Europe and has started being implemented by catering companies serving populations that require supplementation of specific micronutrients. It was also shortlisted for the Nutraingredients Awards during Vitafoods 2015. The concept, developed in partnership with Fortified and DSM, shows the ability of Rousselot to successfully co-innovate and develop with its customers and partners.

Experts from Rousselot will be available throughout the Expo to discuss the multiple functional advantages offered by Rousselot gelatin and collagen peptides.
