Bartek Ingredients, a supplier of malic and fumaric acid, is demonstrating its proprietary technology designed to optimise pectin-based gummy formulation at the Food ingredients Europe trade show in Frankfurt, Germany.
Pecmate, the company's proprietary ingredient, is aimed to improve pectin-based product formulation by helping overcome production challenges such as control over gelling behaviour and maintaining stable pH throughout the formulation process. It's also designed to enable less product loss, less production downtime, and more optimal buffering than other commonly used buffer systems such as sodium citrate.
Gummies and soft candies can be formulated with better consistency, clean release from molds, more stable shape, the company claims.
