Burcon NutraScience Corporation has partnered with Puratos to create healthy and sustainable plant-based functional foods.
Through this collaboration, Puratos will utilise Burcon's canola protein, which will be incorporated into a range of bakery and patisserie products to enhance their health benefits and sustainability credentials.
Burcon's Puratein canola protein will be used as an egg alternative, as many consumers look for plant-based, cost-effective foods that can offer health benefits.
According to Burcon, its egg alternative stands out because of its neutral flavour, functional versitility and high nutritional value.
Eggs are also an expensive commodity at the moment, so food manufacturers could benefit from incorporating cheaper egg alternatives into their formulations.

Puratos will also make its R&D facilities available to Burcon, allowing the company to discover the full potential of canola protein and expand Puratein's potential as a functional food ingredient.
