Ulrick & Short has expanded its offering in beverages with complex 23, a functional protein. Designed for the beverage sector, the ingredient is highly soluble to accommodate different processing methods, as well as a much more neutral flavour profile to not alter flavour profiles.
Suitable for dairy and non-dairy drinks, the protein content is high enough for manufacturers to make 'Front of Pack' nutritional "Source of/High in Protein” claims.
Emma Walker, U&S Development Technologist said: “For many of the public, high protein and performance drinks have a bit of a stigma attached to them because the high protein content nearly always alters the flavour profiles of the finished product, this new protein is really interesting in that respect.
Using new crop bases & technologies, we’ve made a protein which has minimal impact on flavour profiles, yet is still soluble enough for all processing methods, and also allows manufacturers to make FOP protein claims."
Walker added, “Whether for a ‘purpose-built’ sports nutrition application, or just to improve the nutritional profiles of more conventionally positioned products like milkshakes & breakfast drinks, complex 23 is a great product. We have also extensively tested this in plant-based, vegan alternative drinks with really great results."
