Tate & Lyle debuts mouthfeel trend report for better food and beverage formulation

The company highlights the top nine most popular trends in food and beverage formulation, including hyper-crunch, mouthfeel mimicry and climate-proof food

Tate & Lyle has published a new report uncovering the latest mouthfeel trends in food and beverage formulation.

The report, titled "The Future of Mouthfeel", provides exclusive insights gathered from the company, as well as a breakdown of the current trends in the space. 

It also highlights opportunities in improving mouthfeel for food and beverage brands and manufacturers. 

This reports comes off the back of Tate & Lyle's long-term mouthfeel campaign, which was launched earlier this year.
 

Mouthfeel and taste go hand in hand

According to Tate & Lyle, mastering mouthfeel is the key to unlocking a product's taste — which is a crucial factor when formulating a food or drink.

Mouthfeel describes the texture and sensation associated with a product, and can encompass:

  • How a food item looks
  • How it tastes
  • How it sounds in the mouth (eg. does it crunch)
  • How it feels in the mouth

To assist brands in improving the mouthfeel of their products, Tate & Lyle teamed up with Kantar to point out the top nine mouthfeel trends in the food and beverage industry at the moment. 

This includes, hyper-crunch, mouthfeel mimicry and climate-proof food.
