Ingredion introduces functional starch for clean label gelling

The functional corn starch can act as a gelling agent in alternative dairy cheese, while also being beneficial in batters and breadings

Ingredion, a functional food ingredients provider, has introduced NOVATION Indulge 2940, the first functional native corn starch that provides gelling and film-forming properties.

The company claims the product is suitable for dairy and alternative dairy cheese, as well as batters and breadings. 

The functional native starch is the latest addition to Ingredion's clean label product range, delivering novel texture and mouthfeel, as well as natural claim perks to food items it's incorporated into.

In the EMEA region, the consumer acceptance of corn starch rose by 20% between 2020 and 2023 — suggesting the ingredient's appeal is broadening.

Consumer interest in what's in their food has grown rapidly in recent years, with 73% of EMEA consumers requiring products made with only recognisable ingredients, according to ATLAS.
