The purpose of the premixes is to simplify the choice of raw materials for the production of pastry goods and make it possible to create a diverse range of high-quality sweet products.
TopSweet Berliner 12.5% for doughnuts and TopSweet Brandmassenmix for choux pastry ensure that sweet specialties taste fresher and more succulent than ever.
Sweet bakery products are traditionally available in a host of different variations around the world. Customers look for a diversified range of pastry goods with many different ingredients.
But, to save on logistics costs and simplify storage, bakeries have to buy raw materials in large quantities. To permit a workable balance between financial considerations and the wish for a diversity of taste experiences, DeutscheBack has developed the TopSweet series.
TopSweet Berliner 12.5% makes it possible to produce a variety of deep-fried specialties. The premix is not only suitable for doughnuts; it also simplifies the baking of all kinds of yeast-raised cakes and pastries.
At just 12.5%, the premix only constitutes a small proportion of the dough. All the other ingredients such as flour, sugar, yeast and whole egg can be added individually. The type of fat used is flexible, too. No flavouring is included to leave greater scope for creativity. With its excellent dough stability, TopSweet Berliner 12.5% optimises the results of baking even with retarded fermentation or freezing. The baked products have a large volume, an even texture and the characteristic white ring.
TopSweet Brandmassenmix is a universal ready-mixed flour with standardised whole egg powder to make choux pastries, éclairs and crullers. Only water has to be added, which makes handling very simple and reliable.
All the other ingredients are already contained in the mix. Another possible application is succulent quark balls, easily made from 40% premix with the addition of flour, sugar, quark, whole egg, vegetable oil and water.
Like TopSweet Berliner 12.5%, this integrated compound contains no added flavouring at all, which means that the pastry goods can be flavoured just as the baker wishes. For products in which no hardened fats or oils are to be used there is the variant TopSweet Brandmassenmix HVOF as an alternative in keeping with this trend.
