Faravelli is now distributing Angel Xianness yeast extract by Angel Yeast in France and Germany.
“Xianness, or Umami means essence of deliciousness in Japanese: in fact, it is one of the five core tastes, often described as the meaty, savoury deliciousness that deepens flavour,” the company says.
From a technical point of view, umami is the taste of glutamate, an amino acid occurring naturally in the human body and many foods.
The yeast extract, available from Faravelli, can be used in a variety of food applications, such as plant-based meat, bouillon or snacks.
The extract can be used to provide products with a well-balanced taste profile, offering a strong umami taste and a prolonged aftertaste.
Containing natural nucleotides, Angel Yeast’s extract is able to intensify the overall taste of food products. It’s a clean label ingredient and a natural substitute for MSG.
